Is there anything better than Sunday morning? I like to wake up anticipating a social, productive, and rejuvenating day ahead! And that means starting the day with one thing: brunch! In my circle, brunch is taken very seriously During the winter months we would all make the pilgrimage to our local haunt and huddle together in the subarctic temperatures awaiting our way in the mile-long lineup inside to our usual table. But those frigid days are long gone and our new thing is throwing a brunch party from the comfort of my kitchen and over-sized sun-drenched deck! Being somewhat of brunch aficionados, we've gotten things down to a science. With a variety of dietary restrictions in our group (I'm a vegetarian, some of us have Celiac, etc), it's important to make things accessible to each of us. Spending quality time cooking, relaxing, and enjoying the sun with good company makes for a fantastic start to the day and these recipes make it all the more enjoyable. Behold, the ultimate vegetarian, gluten-free, and most importantly, delish brunch recipe.
Gluten-Free Pancake Recipe:
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 ¼cup Farafena’s Fonio Flour
- 2 tablespoons ground flax seeds
- 1 teaspoon vanilla extract
- 1 egg
- 1 tablespoon of Wendell Estate Honey
- 1 ½ cup Almond Milk
- ¼ cup Coconut Oil
I promise you one thing: even the most discerning gluten-fanatics will have no idea these pancakes are in fact void of any and all gluten! There's virtually no difference in texture or taste (in fact I think I like them more than regular pancakes!) and they maintain the ultimate level of fluffiness.
No brunch is complete without a fruit salad. That's just a cardinal rule! This one is a favorite of our group with its simplicity and slightly tropical infusion! But obviously there are no fruit salad rules, so switch things up to your hearts content!

Instead of mixing all the sliced fruit together, I like to lay everything out in a baking dish and keep each fruit separate. Not only does it look really pretty, but it gives everyone the option to pick out their preferred ratio of each item. We're extra fussy like that.
Ashanti CoffeePerhaps the only thing we're more serious about than brunch is coffee. No joke, I think for five women we go through at least five full french presses throughout the morning. Fair-trade, high quality beans are a must! Recently I've become wildly obsessed with Ashanti beans. We brew it a lot around Vitarock HQ, which is how I originally became acquainted. After declaring my first cup the "greatest cup of coffee of my life," I learned more about the company which solidified my love affair.
Ashanti is a Canadian-based company that controls their product from "farm to cup." Their beans are imported from Africa and hand-roasted daily in Thornbury, Ontario which makes for an always-fresh and never stale product. As a company, they feel "... Good employment allows people to provide for their families, reach their full potential, and improves self-esteem. We consistently strive to achieve this in both Africa where our coffee is grown, and in Canada, where it is roasted, distributed and promoted. So there you have it! My (no longer) top-secret brunch recipe! It's all the classics, but elevated to the highest quality making for the best in Sunday mornings. Also, in case you forgot, I am a self-confessed cooking failure, but even I can handle this. I hope you enjoy!
